We use a CBS-2052, 208v, 30 amp brewer that has served us well for the last 2 years. Very recently it has began taking an extended amount of time to re-heat between brews. What can cause this and how can we tell what it is?

I am glad to hear that your 2052e has served you well at the same time I am very sorry to hear that you are experiencing trouble with it currently.
The problem you described has several possible causes from a bad heating element to scale build up on the heating elements or temperature probe.
I do not know if you have any testing equipment but the first thing that I would check is the amperage draw on each heating element. If the brewer is hooked up single phase then only two heating elements will be active (one on the left and one on the right) if the brewer is hooked up to 3 phase power all three heating elements will be active.
Each heating element should pull around 10amps. If one of the heating elements is not reading at all, it is possible that the triac that supplies power to the heating element is not closing or that the single shot t-stat is open not allowing power to the heating element. If the amperage reading is low then this would indicate a bad heating element. If the amperage draw is where it should be or a little higher then it is a scale issue and the tank needs to be de-scaled.
