Ask The Expert: Should I leave my coffee brewer on 24 hours a day?

QUESTION:

We currently have a Fetco model # CBS-62H. Currently this unit is left on 24 hours per day. Our food & beverage director is telling us that this is per manufacture recommendations. Is this true?

What should be the approximate time if this unit is shut off to bring the water up to temperature?

ANSWER:

This is a common question and the simple answer is yes, this is true. FETCO does recommend that all coffee brewers, tea brewers,  hot water dispensers and so forth be left on 24 hours per day. This is because depending on how long the brewer is left in the off position there is a recovery time involved.
 
As an example, let's say that the brewer is off for 8 hours with an ambient temperature of 75F, the tank temperature will commonly fall to about 175F. It will take approximately 20-30 minutes for the brewer to come back up to operating temperature.
 
This is ultimately the reason for this recommendation. Now if this brewer is left unused for long periods of time and you wish to turn the brewer off this can be done however please realize that the brewer is designed to be left on. Therefore there are components that will have shorter life spans because of this. Specifically the power switch and the heating elements.
 
Fair warning however, if brewer is off for a long enough period of time the brewer could drop to room temperature and then it would take 45min to an hour to recover.
