Ask The Expert: Selecting the Right Size of Equipment
QUESTION:
Good morning,
I am opening a gourmet bakery with a very high end coffee offering and need some guidance on what equipment I should purchase. I am stuck between the 2021 and 2031 models as I am not sure how much product I am going to sell. This is our first shop, and trying to figure out volume expectations is very hard. We want the product to be as fresh as possible, and have heard that the “life expectancy” in an airpot or similar container is about 30 minutes. I don’t want to waste coffee and was leaning to the 2021, but three 20 ounce coffees would wipe me out. Although, if I purchased that product I would have extra L3S-05’s to ensure constant product flow. Any recommendations??

ANSWER:
Equipment sizing is always difficult especially when you do not have hard numbers to work with as in your case. There are several things that you need to look at when making an equipment choice. The most important is the brewer’s ability to keep up with demand.
The 2021 has the ability to produce 15.2 L per hour which would equate to 8) 64 oz containers or 24) 20 oz cups.
The 2031 has the ability to produce 21L per hour which would equates to approximately 11) 64 oz containers or 33) 20 oz cups.
Now this is at 120V 20amps for both units.
The 2031 is convertible to 120/208-240 and in this configuration you will get 12 additional liters per hour. So there is expandability built into this brewer. But an electrical upgrade will be needed.
If you have room for it and you want to stick to the 2021 with multiple dispensers (Multiple dispensers would be needed either way) then when your business grows you could purchase a second 2021 and double your out put.
The 2021 is a lower cost application with expandability based on adding equipment.
The 2031 is a higher cost application with expandability based on electrical modification.
