Ask The Expert: Weak Coffee
Question:
I have a customer (a restaurant) using an old 52H and up until
yesterday the coffee brewing has been fine. Then, all of a sudden, its
weak, thin, watery. The beans are exactly the same as they have been
using, so I know its not that. It seems that there is a great deal of
bypass at the beginning of the cycle and the water is just pouring out.
Also, they are not the most conscious when it comes to keeping things
cleaned up (other than appearance). I can't tell you the last time the
brew head was taken out and cleaned. I've never taken one of these out
can you guide me? Are there classes you offer on maintenance. It seems
that in these times I (the roaster) am getting called more and more
for service.

I am very sorry to hear about your challenges.
Question: What is the temperature of the water when brewing? If the water temperature is too low, the coffee will be under extracted leaving a weak, thin, watery cup.
As far as the spray head goes, it is held in place by a silver lock nut that should simply unscrew by hand from the brewer. Just make sure you do not try to remove it right after a brew. Turn counter clockwise to remove and clockwise to install. If this is missing it would have the same result as temperature.
